Trays are usually manufactured from 0.6mm aluminised steel. May also be made from 1.2mm aluminium if used in cool rooms. Trays may be perforated or plain.

Silicone coated trays require ‘burning in’. PTFE coated trays should be oiled when new. Failure to oil new trays when first used can affect release properties and longevity.
